Panther’s Nicaraguan Finca La Amistad is a Sweet Coffee
The coffee tasted today is from Panther Coffee a Miami-based specialty coffee roaster that specializes in small-batch roasting.

Panther Nicaragua Review
Bear with me on this review. It’s going to sound weird, odd, maybe even strange.
When I opened the bag and hand ground some of this Nicaraguan coffee, it smelled like fresh hay. Yes, fresh hay, I grew up working on farms, so I know that smell.
Now, don’t click away, it didn’t taste like hay. The aroma is different but very pleasant.
I had to look it up on the SCAA Coffee Taster’s Flavor Wheel. Sure enough, there’s a listing for hay, under the Green Vegetative section.
As strange as it sounds I enjoyed the aroma and found coffee brewed at a 16:1 ratio using a Hario V60 dripper has bright sour notes. Not a bad sour but a little bite on the tip and sides of the tongue.
I didn’t taste the stone fruit or dried cherry notes as mentioned in the Roaster’s Notes (see below). But remember, coffee tastes different when the roaster do cuppings when compared to brewing a single cup of coffee
As you may know, when I get a new coffee I brew it through a lot of different brewers until I find one (or two) methods that fit my tastes.
With the Hario, the coffee tasted bright and clean if you like a more mellow cup of coffee, try brewing it using a French Press, as the coffee had a nutty and bold flavor.
Another interesting tasting trait I found with this coffee, is when it cools the coffee becomes much sweeter. Yeah, it goes from this bright, slightly sour, crisp taste to a mellow sweet brew. It isn’t a fluke, each cup I had did the same transition.
I’m not going to say it was a sweet chocolate tasting coffee, but a change in taste as the coffee cools while drinking it is what I look for in a good coffee. If I want a plain tasting brew, I’ll go to a diner and drink their coffee.

Roaster Tasting notes: Sweet and caramelly – Peach, apricot and dried cherries. Very mild with a clean finish.
The producers of this Nicaraguan coffee say this about how they dry their coffee beans after washing.
The construction of several large-scale shaded raised drying beds have slowed the drying process substantially, producing a soft, sweet profile with a very clean finish. These beds, combined with nearly perfect weather, have produced coffee cherries with outstanding ripeness, lending a vivid sparkly fresh fruit character in the cup.
I will have to say that is what I tasted. The coffee brewed in a dripper had a sparkly fresh taste. But what intrigued me more, was the earthy and herbal aromas of the fresh ground coffee and the sweetness of the brewed coffee as it cooled.
Panther Coffee did a great job of roasted this Finca La Amistad Nicaraguan coffee. The aroma is pleasant, the flavors are distinct, complex, and change as you drink the cup of coffee. The coffee is well worth purchasing and because of the complexity of the coffee, I wouldn’t be scared to try more Panther Coffee.
